Tea Sandwiches
2 tbsp butter
1 1/2 tsp finely chopped fresh chives
2 tsp Dijon mustard
16 slices white bread
8 slices prosciutto, thinly sliced
thinly sliced cucumber, peeled
salt and pepper to taste
Step 1
In a small bowl, combine butter, chives and mustard. Spread bread slices with a thin layer of the seasoned butter.
Step 2
Top 8 bread slices with 1 slice of prosciutto and a layer of sliced cucumber. Season with salt and pepper and place remaining bread slices on top.
Step 3
With a sharp knife, cut off crusts and then cut each sandwich in half on the diagonal to create triangle shapes.
Step 4
Serve immediately or cover and refrigerate for up to 3 hours.
